The Mother of My Favourite Salad

Chicory (the stuff you can buy at the fruit and veg stall, looks a bit like a stoneage hand-axe in white) was discovered by accident when Belgian farmers stored chicory roots over winter and they developed the bulbous shoots.

In German, the common name is Wegwarte, i.e. the waiting one next to the path which I find rather lovely.

    1. In South Africa instant coffee was (is?) mixed with chicoree? It was considerably cheaper than “proper” coffee and Nestlé had/has a brand called “Encore” (that was when I still bought Nestlé products) which came in great glass containers. More than 40 years later these glass jars are still an integral part of my kitchen shelves.
